Canestrino tomato is a local variety of special interest for its typicality, cultivated since almost 100 years in the province of Lucca. Pear shape, withribs more or less pronounced, red, blush green near the collar, firm pulp, the taste contrast with low acid, sugar content high, medium consistency, excellent quality . Production is in open field and in the greenhouse, in growing feature in the field grows high enough with tutor in the barrel. In cooking is great for both salads and for sauces.
