The Thistle Cynara cardunculus is a wild specie belonging to the Composite family. The bushy plant development is characterized by robust stem, taprootand large leaves. The edible part is ivory white, tender and crisp. There is a technique of traditional cultivation consisting in the bleaching of the producttying thistle beam, digging the side of the plant and burying it for 2/3 cm.This technique gives the plant an arched aspect that is the cause of the nickname “Gobbo” (hunchbacked). The modern technique of cultivationprovides coverage of the plant with a plastic film of black color, sometimeswithout even resorting to folding. Available from October to March.
