The fish farm “La Jara”, is located in the valley of Turrite, near the hermitage of Calomini.

Here they raise three types of trout: rainbow trout, salmon and steelhead albino. In addition we also have the equipment for farming and sfilettarle affumicarle. We are proud of this geographical position: the waters of Turrite Gallicano, the stream that flows nearby, and feeds the livestock tanks are pure and fresh. “We cherish our trout for 20 months,” says Christian “until adulthood, keeping them in clean, filtered water in each tank changing them according to their age. When you are ready to sell to our customers who are in the majority of restaurants area or we can affumicarle here on the farm. trout is filleted and placed in salt, when it is ready is smoked for about six hours when using the aromatic wood forest hermitage of Calomini at the end of this process we put in a vacuum making it in fact ready for sale.

The close farm “the Hermit” that adjoins the breeding, is family run, my brother is a good cook and expert trout his best dishes are spaghetti with meat sauce and the famous trout fillet of trout baked with potatoes.
